Starling takes the kind of setting usually reserved for honeymoons and scales it up for a bigger group. Three villas share one hillside above Pyrgos, each with its own pool and jacuzzi, together offering eight bedrooms for up to sixteen guests. You still get the things couples love about Santorini – the sea views, the light, the privacy – but you can share them with family and friends rather than seeing them only from a table for two.

Outdoors

Outside, there is a feeling of having your own small resort. Private infinity pools spill towards the sea, with terraces that hold sunbeds, shaded lounges and spots that were clearly meant for two glasses and one bottle between them. The heated jacuzzis are hard to resist in the evening, with the sky fading and the island beginning to light up. There is enough space that some can stay by one pool while others gather by another, yet the estate still feels like a home away from home.

Indoors

Inside, the main villa and its guesthouse can easily hold the “core” of the group, with a full kitchen, dining area and several bedrooms sharing the same comfort. The other two villas are ideal for couples who might, in different circumstances, have booked a smaller, romantic hideaway. Together, they feature three queen bedrooms, living areas and fully equipped kitchens, with bathrooms designed for lingering, including whirlpool bathtubs and, one with a steam room. Across Starling, interiors stay bright, minimal and soft-edged.
