The international food day is just a breath away. You are about to learn the secret for a yummy gourmet recipe that needs only 15 minutes’ preparation. It’s going to be your secret weapon for success in every dinner or a quick solution for the fish lovers!
Basic ingredient: Skate!

This recipe of skate salad comes from Paros and it is so tasty that stands alone as a very good excuse to visit the island. Salatouri is its name, if you want to brag about it (because you will definitely succeed it is very easy)!

What you’ll need:
•    1 kg skate wings
•    1 onion
•    1 bay leaf
•    1 teaspoon olive oil

For the dressing:
•    1 cup olive oil
•    1 cup lemon juice
•    1 tablespoon table mustard
•    Salt and pepper
•    1 medium onion finely chopped
•    3 tablespoons chopped parsley

How to make it:
Boil the skate wings for 3 minutes. Let them cool for a few minutes and remove the skin. Place the wings, the onion, the bay leaf and olive oil in a pot. Cover with water and boil for 10 minutes. Remove them from water to dry. Use a fork to pull skate meat away from the bones and reserve in a bowl. Whisk the ingredients for the dressing well in another bowl. Pour it over the skate meat and mix thoroughly. Ready to serve!
